Gluten-Free Chocolate Chip Pudding Cookies


First time making pudding cookies! And they are the softest cookies I'ver ever made! Seriously. When I first took them out of the oven I thought they'd harden up as they cooled down but they stayed super duper soft! They are light and delicate and you could eat and eat and eat and not feel full. The best part is that they are guten-free and have very little sugar so you don't have to feel guilty after having one or two or eight :)



Ingredients:
2 Cups Corn starch
1 Tablespoon honey
96g (1 pack) Pudding of your choice (INSTANT not cook and serve)
1 Teaspoon baking powder
1/2 Cup brown sugar
1/4 Cup Grape seed oil
Dark chocolate chips
2 Eggs
1/2 Teaspoon vanilla extract


Directions:
Preheat over to 180 degrees Celsius. Mix the grape seed oil, sugar, eggs, vanilla extract, honey and pudding together. Add in flour and baking powder and mix until everything is combined. Sprinkle in chocolate chips and roll the dough into balls. Place these on a non-stick cookie sheet. Place in oven and bake for 11-13 minutes. Cookies should be soft but not falling apart when taken out of the oven. Let them cool down for about 10 minutes and then transfer onto a (pretty) plate of your choice :)
